Peel, chop and boil potatoes-I prefer red. Drain. Place in large pyrex dish prepared with oil spray.
Saute onion in olive oil til soft. Add garlic, cook til soft. Add sausage (remove casings and break up,) til mostly browned-doesn't have to be crispy. It will cook in the oven. Add red peppers and cook til softened. Turn off heat. Add minced cherry peppers (I use a heaping tablespoon---go easy. They are hot.) Mix thoroughly.
Add sausage mixture to potato mixture, mixing thoroughly. Bake at 425 for 30 min.
